The fruit was hand-picked to select only the highest quality grapes. Prior to fermentation, a portion of the fruit was set aside in whole bunches and were treated to partial carbonic maceration; introducing a playful lightness to the wine’s structure, and a fruit-forward, low-tannin flavour profile. This was then further complemented by aging in large format French oak to further soften its tannins.

Every wine region has a variety that feels like it’s beating heart, and here on the Mid North Coast, that grape is Chambourcin.
When John established Cassegrain Wines in 1985, he brought with him not only a rich winemaking heritage from France, but also a forward-thinking approach to what could thrive in Port Macquarie’s coastal climate.
It is a fairly new species, only coming into existence in 1963. It has large, luscious berries in loose, open bunches and, most importantly, a strong natural resistance to mildews and botrytis. Chambourcin is also one of only a few species of teinturier grape, which are wine grapes that have red flesh.
In partnership with the CSIRO, Cassegrain Wines were the first in Australia to commercially grow Chambourcin. This was in response to many classic varieties struggling in humid conditions, where as Chambourcin flourished here, yielding vibrant fruit that captures both the character of the land and the innovative spirit of the winery. It continues to be grown in Hastings River NSW, and across Australia in Hunter Valley NSW, McLaren Vale SA, and Tamborine Mountain QLD.
In the glass, Chambourcin is instantly recognisable by its strikingly rich colour - a vivid crimson-purple that hints at the flavour to come. On the palate, it offers juicy notes of dark cherry, plum, and blackberry, often lifted by a gentle spice or earthy undertone. Medium-bodied with soft tannins, Chambourcin is approachable and smooth, making it a wine that appeals to both seasoned enthusiasts and those just beginning their wine journey.
As for food pairings, Chambourcin is rather approachable. Its fruit driven character makes it a natural partner for charcuterie boards, roasted chicken, lamb skewers, rich tomato-based pasta, or some cheeky chocolate.
Nearly four decades after is was first planted in the Hastings River, this variety remains a proud symbol of the Mid North Coast. With every glass, you’re tasting not just a variety, but a piece of the region’s history and the passion that continues to shape it.
