  • Winemaking

    The intention was for the Cabernet Sauvignon to showcase its typical flavour profile of herbs, capsicum, blackberry, and plum, as that leaner style is balanced by the Merlot, which fills in the mid palate quite nicely. Each parcel was matured separately, with the Cabernet Sauvignon split across a mixture of large and small format oak, whereas the Merlot was just in larger oak, due to the soft, delicate tannins.
