Edition Noir Riesling

Picked in the cool of the early morning, then gently pressed ready for fermentation. Within 24 hours the cool fermentation was commenced at 14ºC. This process was chosen to create a more aromatic and fresh flavour profile and to create a little bit of stress in the yeast. 60L of clarified juice was set aside pre-fermentation, to be re-introduced post-fermentation, to balance the wines acidity using the natural sugars in the juice.

Notes of citrus and apple, with hints of stone fruit and dried spice. Crisp clean finish.
