Edition Noir Pecorino Fiano

This was the first time we had the ability to play with Pecorino so its was quiet the journey albeit a lower yield than anticipated. Picked in the cool of night, the Pecorino and Fiano were fermented in separate parcels to ensure the integrity of each variety before being blended and prepared for bottling. The Pecorino has a nice acidic backbone which is beautifully balanced by the softer tropical characters of the Fiano, giving the wine many layers, with a nice mid palate, and a savoury yet dry finish.
