The catalyst was when some Pinot Gris arrived 3 days after the Merlot had begun fermentation, which Alex saw as a unique opportunity to place the Pinot Gris on the Merlot for co-fermentation. The Merlot had a deep and rich flavour, complimentary to the Pinot Gris’ low sugar levels, flavour, and acid structure. Once fermentation was complete, it was pressed off into a 4500L foudres, with the remaining going into 225L barriques for 18 months of maturation. The wine then went into tank to prepare for bottling.

Notes of red plum, ripe cherry, dried herb, with a hint of ground coffee, followed by a pretty fruit character.
