This Australian sparkling wine is produced from Sangiovese grapes from Hilltops, NSW and has an alluring bouquet full of lifted strawberry, watermelon and citrus. The palate is elegant and shows a good depth of flavour and finishes crisp and clean.
The base wine was fermented in refrigerated stainless steel tanks to retain the fresh fruit characters, with secondary fermentation and maturation for 6 months in the bottle, to impart subtle yeast complexity.
