- Winemaking
A number of parcels from across several regions were fermented separately in open and closed fermentation vessels. The portions in closed fermenters were cold soaked before fermentation using the natural, indigenous yeast of each vineyard for fermentation. On completion of the primary fermentation, the wines were then transferred to a combination of 2500 litre, 4500 litre casks (30%) and new (40%) and 1 year old (30%) 225 litre French oak barriques barrels for the secondary fermentation and maturation for 20 months.

This cool climate Shiraz exhibits perfume and white pepper aromas with raspberry and hazelnut flavours. Medium bodied, very complex, lingering tannins and great length.

Australia has taken a very well-known French variety, and through our winemaking techniques, has become what Australian winemakers are best known for and Australia’s best-selling wine.
Dating back over one hundred years, Australian grape growers dedicated the best terroir to growing the Shiraz variety. It is this philosophy that guides the Cassegrain winemaking team when selecting the best fruit to use in our Reserve Shiraz.
Like our Chardonnay, Shiraz was a part of Cassegrain Wines’ first vintage 40 years ago.
