Noble Cuvée

Made from Viognier grapes, this dessert wine is inspired by John Cassegrain’s studies in Bordeuax, France, where he studied the use of Botrytis to make dessert wines. Botrytis concentrates the grape sugars, making the wine into a sweet dessert wine. This method is rare in Australia due to the precision Botrytis requires. Other regions, notably Germany’s Mosel, Hungary’s Tokaj, and Australia’s Riverina, also use Botrytis for similar styles.

Vibrant gold. The nose exhibits intense apricot, mandarin and lime marmalade notes. The flavours follow through a luscious palate which culminates into a lively tang of acidity.
