2017 Edition Noir Viognier
We challenged the winemakers to craft a Viognier that wasn’t typical. Elegance and finesse was the brief given and to avoid the shortcomings of the variety which can be oily and unctuous. We chose fruit from the Hilltops region and to pick the variety early and press off the skins as quickly as possible.
The aim was to capture the pristine green free-run juice for fermentation. Fermentation was cool to cold again with the objective to retain the fine fruit characters. The resulting wine has a fine straw colour with green hues. The aromas are of the tropical spectrum showing hints of lychee and beautiful pear. The palate flavours mimic that of the nose and is extremely balanced and lengthy.
The palate is beautifully fine yet possesses a complex structure lending itself excellently to white protein based foods. The challenge was accepted and over-achieved by the winemakers.
