Some years ago Cassegrain established a specialist winemaking
facility designed to cater for contract winemaking for small to
medium-sized companies that do not have the infrastructure to
produce their wines in-house. These contract services start at
the vineyard and progress right through to bottling and distribution.
Such a facility
allows smaller wineries (or those that have reached full capacity)
to reduce the financial pressures of wine production and assists
in the creation of premium quality wines at competitive prices.
The winemaking services consist of an efficient 'fruit receiving'
area permitting immediate processing, pre-harvest maturity analysis,
versatile wine styles and technologies, barrel storage, comprehensive
and secure documentation, bottling and dry goods procurement, label
design and labelling of wine.
The principal aim
of the winemaking team at Cassegrain is to ensure that the characteristic
flavours of the fruit brought in on contract by these growers are
maintained and enhanced through the winemaking process and delivered
in the bottle to the consumer.
